This isn't the kind of bike you'd expect to roll out of a shop named Santiago Choppers.
Owned and run by prolific custom builder Alan Bernard, Santiago's specialise in trikes and bobbers more than café racers but the Breitling bike proves Alan has more than one trick up his sleeve.
The frame is 1970's vintage Moto Martin and the Kawasaki Z1000 engine is from a similar period. The swing arm, wheels and suspension are from a GSX-R600. The bike will featured in a Discovery Channel documentary on Café racers this October.
